Let’s get started:

Place 2 cups of basmati rice into a medium to large microwave safe bowl. Add 4 cups of boiling water to the bowl. Microwave for 13 minutes on high temperature. I use a 1000w microwave on high.

You’ll need:

  • .5 tsp oil
  • 1 medium onion, diced
  • 200 gms of bacon, diced
  • 1 tsp of minced garlic
  • 2.5 cups of frozen mixed vegetables ( I used peas, carrots and corn mix)
  • 2 tbsp soy sauce

While the rice is cooking, dice the bacon and onion.

Heat the 1/2 teaspoon of oil in a large frying pan on medium heat.

Add the 200 grams of diced bacon rashers and diced onion to the frying pan and saute until the onion is translucent. This will take 2 minutes, stir frequently.

Add 1 tsp of garlic (or more if you are a lover of garlic) to the frying pan and stir it through the bacon and onion cook for 30 seconds to release the flavour.

Next, we add the 2.5 cups of frozen mixed vegetables. Cook until the vegetables are completely heated. Stir frequently.

When the rice is cooked, fluff it up using a fork, ready to add to the frying pan.

Add the fluffy rice to the frying pan and stir through the bacon and vegetable mixture.

Add the 2 tablespoons of soy sauce to the fried rice mixture. Stir the rice, bacon and vegetable mixture.

You can have this cheap and easy fried rice as a main meal or as a side with perhaps a stirfry.

  1. Rice

    Place rice in a microwave safe bowl, pour water over the rice, and cook in the microwave for 13 minutes.
  1. While rice is cooking in a large frying pan, pour oil, add bacon and onion, and cook on medium heat.

  1. Add and stir garlic to the bacon and onion. Place the frozen mixed vegetables in the pan and cook.

  1. Now the rice is cooked; use a fork to fluff the rice by stirring it. Add the rice to the frying pan, mix until the bacon and vegetables are thoroughly cooked, and stir in the soy sauce.
