Beef Rissoles are a great weeknight meal. You could meal prep for the week ahead or a coming BBQ. With a few affordable ingredients that you may already have in your fridge or cupboard. This beef recipe could become your go-to rissole recipe, full of flavour and set to have your family’s bellies full with contentment.

A good thing about rissoles is that you can adjust the flavourings to suit your needs. You could even change the minced Beef to minced chicken, pork, lamb, or vegetarian mince. Just match the stock powder to the protein base, and you have a wide variety of Rissoles.
Let’s jump into the recipe:

- Peel and dice 1 medium to large brown onion

- Peel and finely grate 2 medium carrots

- In a large bowl, place:
- 1 kg of beef mince
- 2 tbsp stock powder of choice (I used chicken)
- Pepper to taste

- Add to the same bowl:
- 1.5 tbsp mixed dried herbs
- 1.5 tsp crushed garlic
- 4 tbsp tomato paste
- .5 cup BBQ sauce
Mix all the ingredients to combine

- Roll the beef rissole mixture into 20 equal portions, flatten a little.
- Using 1 cup of dried breadcrumbs, cover each rissole in the breadcrumbs and gently pat the crumbs into the rissoles

- This recipe makes 20 units of rissoles. I cook 10 and freeze 10 for a later meal. Cooking and meal prepping all in one!

- Add some oil to a frying pan and cook on a medium heat until each rissole is cooked entirely. Around 7 minutes each side, depending on the thickness of your rissoles.
