I have made a very easy recipe, as there are many ways you can make them. In this recipe, you get the savoury flavour from the sausage or frankfurters and the buttery taste from the store-purchased puff pastry. You can add poppy seed or even sesame seeds to the top of the pastry before cooking to release the flavour.

- You will need:
- Cocktail frankfurts tinned, fresh or both
- Egg
- Milk
- Puff pastry sheets
- Seasame seeds, black, white or both

In a small bowl, crack an egg and add milk. Whisk with a fork to combine.

Open the tinned cocktail frankfurts and drain.

Cut your defrosted sheet of puff pastry into 16 squares. You will need 2 x sheets of puff pastry as the tinned Cocktail franks have a minimum of 25 sausages in Australia.

Remove 1 square of puff pastry, place 1 cocktail frank in the middle on a diagonal and bring the edge of the pastry to the middle of the sausage; do the same for the other side of the pastry. Watch the video for visual instructions. Follow this same step for all sausages.

Place each pig in a blanket on the lined baking tray. Brush each pastry with egg wash.

Optionally, you could sprinkle with poppy seeds or black, white or both sesame seeds. Place the pigs in blankets in the oven at 180°C for 10 -15 minutes.

If you are using fresh cocktail frankfurts, follow the same steps as above, except cut the puff pastry sheets into 9. Cook in the oven for 10 – 15 minutes or until golden brown.

If using packaged cocktail franks, peel the red outer skin.
