If you love the smell of coffee and the taste of a soft, buttery cookie, you are going to fall for these Coffee Bean Cookies. They are made with simple pantry ingredients, come together quickly, and have that lovely melt-in-your-mouth texture that pairs perfectly with a cup of tea or coffee.

1/2 Tbsp Boiling Water
1/2 Tbsp Instant Coffee
1/3 Cup Butter (75 Grams) Room Temperature
2/3 Cup Soft Icing Sugar
1 Egg Yolk
1 Cup Flour (Plain)
2 Tbsp Coco Powder
2 Tbsp Corn Flour (Corn Starch)
1/4 Tsp Salt
Some general notes on ingredients:

Dissolve your coffee in a small amount of warm water. Preheat your oven to 170°C or 340°F

Cream the butter and sugar together until light and fluffy, then add 1 egg yolk and mix until fully incorporated. Add the coffee mixture to the butter, sugar, and egg yolk, and stir until combined.

Add the sifted dry ingredients, plain flour, cocoa powder, salt and cornflour, mix with a spatula or use your hands until a soft dough forms.

Shape the dough using a teaspoon of the cookie mixture, shape into small coffee beans, and place on a lined baking tray. Using the back of a knife or the tip of a spatula, place an indent on each cookie to make them look like a coffee bean. Place uncooked cookies in the fridge for 20 minutes or the freezer for 8 minutes.

Bake for 10 - 12 minutes in your preheated oven. Cool on the tray for a few minutes before transferring to a wire rack.
